Sayur Asem

Sayur asem is a very popular fresh vegetable soup dish in Indonesia that is completely made from 100% plant-based ingredients! This dish combines a variety of fresh vegetables cooked in a clear broth with the distinctive fresh sour taste of tamarind, combined with the savory spices, a little sweetness of brown sugar, And the fragrant aroma of galangal. With no animal ingredients whatsoever, it's light, refreshing, incredibly appetizing, and best served warm with white rice, sambal, and fried tempeh!

🛒 Ingredients

  • One sweet corn, cut into 4 to 5 pieces
  • One chayote, peeled and cut into large cubes
  • 5 long beans, cut into finger-sized pieces
  • One bunch of melinjo leaves (so leaves)
  • 10 melinjo fruits
  • 100 grams of peanuts, cleaned
  • Two large green chilies, cut in half
  • 1 liter of clean water
  • Three shallots
  • 2 cloves of garlic
  • Three candlenuts
  • One segment of galangal, bruised
  • Two bay leaves
  • One tablespoon of tamarind, dissolve with a little water then strain
  • One teaspoon of grated brown sugar
  • Salt and mushroom stock to taste

    Boil the water: Bring water to a boil in a saucepan, add the ground spices, galangal, bay leaves, and tamarind juice. Cook until fragrant.

    Cook hard vegetables: add corn, chayote, peanuts and melinjo fruit first, cook until half soft

    Add the other vegetables: add the long beans and green chilies, cook briefly until cooked through but still crispy. Finally, add the melinjo leaves.

    Adjust the seasoning: Add the brown sugar, salt, and mushroom stock. Stir well, then simmer until it boils again. Taste and adjust the flavors for sourness, savoryness, and sweetness.

    Serve: Remove from heat and serve warm, your typical Indonesian soup is ready for you to enjoy!
