
Ketoprak
Ketoprak is a traditional Betawi dish that is very popular throughout Indonesia, completely natural and plant-based! This dish combines soft fried tofu, chewy rice vermicelli, rice cake/rice, and fresh bean sprouts drizzled with a smooth, savory, spicy peanut sauce, enhanced with a touch of lime and a sprinkling of fried onions. Without animal ingredients, the taste is perfectly balanced between the thick savory taste of peanuts, the fresh spiciness of chili, the fresh sourness of lime, and the diverse and alluring textures. 🛒 Ingredients
- 4 pieces of white tofu, cut into cubes, fry until brown
- 100 grams of rice vermicelli, soak in warm water then drain
- 150 grams of bean sprouts, steep in hot water for a while then drain
- Two pieces of lontong or warm rice
- Fried onions to taste
- Lime for squeezing
- 100 grams of peanuts, fried until cooked
- 3 cloves of garlic, fry briefly
- 5 curly red chilies (adjust to your taste for spiciness)
- Two lime leaves (optional)
- One tablespoon of grated brown sugar
- 1/2 teaspoon salt (for peanut sauce)
- One tablespoon of sweet soy sauce
- Enough warm water to dilute the spices

Make the seasoning: grind the peanuts, garlic, chilies, brown sugar, and salt. Add sweet soy sauce, then pour in warm water little by little while stirring until the desired consistency is reached.

Prepare the filling: spread the rice cake/rice evenly on a plate, arrange the fried tofu, rice vermicelli, and bean sprouts in sequence.

Serve: Drizzle with peanut sauce evenly, sprinkle with fried onions, add lime juice to taste and enjoy immediately!
