
Urap Sayur
Urap sayur is a traditional dish that is much loved throughout Indonesia! This dish combines various types of fresh vegetables which are boiled briefly to keep them crispy and beautifully colored, then mixed evenly with grated coconut seasoning seasoned with special spices. Steamed thoroughly to keep it fresh and safe to consume. Without any animal ingredients at all, it tastes savory with the aroma of coconut, spicy sweet and balanced with spices, and brings a warm and nostalgic homey taste. Very healthy, rich in fiber, and perfect as a side dish with warm rice!

🛒 Ingredients
- One bunch of long beans, cut into finger-sized pieces
- One bunch of spinach or cassava leaves, pick the leaves
- 100 grams of bean sprouts, remove the tails
- One carrot, cut into matchsticks
- 5 florets of beans, cut obliquely
- A little salt for the cooking water
- 1/2 grated coconut, choose one that is half ripe (not too young or old)
- 2 cloves of garlic
- Three shallots
- Two curly red chilies (adjust to your taste for spiciness)
- One segment of galangal
- One lime leaf, remove the leaf veins
- 1/2 teaspoon vegan grilled shrimp paste (optional, can be substituted with mushroom cardamom)
- Sufficient salt and brown sugar/coconut sugar as ingredients for coconut seasoning

Boil the vegetables: Bring water to a boil with a pinch of salt. Boil the vegetables one by one according to their degree of doneness (starting with carrots, then green beans, then long beans, then finally bean sprouts and spinach). Just a moment, lift and drain until the water is completely gone.

Grind the spices: grind or blend the shallots, garlic, chilies, galangal, lime leaves, vegan shrimp paste/mushroom stock, salt, and sugar until smooth.

Mix and steam: Combine the ground spices with the grated coconut and stir until well combined. Place in a heatproof container and steam for 15 to 20 minutes to ensure the mixture is cooked through and preserved.

Mix the dish: just before eating, mix the cooked coconut with all the boiled vegetables while stirring gently until evenly coated.

Serve: Arrange on a plate or banana leaf, enjoy immediately with warm rice!
