Greek Veggie Balls

Greek Veggie Balls are a completely plant-based version of the delicious Greek culinary classic's savory balls! Made from a mixture of fresh vegetables, nuts, aromatic spices such as oregano and mint, shaped into balls and then baked or fried until the outside is crispy and the inside is soft and has a distinctive aroma. With no meat, eggs, or dairy products, this dish is still rich in flavor, a little spicy and refreshing, and is perfect served with plant-based tzatziki sauce, rice, or any party snack everyone loves!

🛒 Ingredients

  • 150 grams of red beans/lentils, boiled until soft, drained and coarsely ground
  • One carrot, finely grated, squeeze out the juice
  • 1/2 small eggplant or zucchini, grated, squeeze out the juice
  • 1/2 onion very finely chopped
  • 2 cloves of minced garlic
  • 3 tablespoons of wheat flour or chickpea flour
  • 2 tablespoons chopped fresh parsley leaves
  • One teaspoon of dried oregano, a few chopped mint leaves
  • Salt, black pepper and a little cumin powder to taste
  • Oil for frying/baking
  • Plant-based tzatziki sauce (plant-based yogurt, grated cucumber, garlic, lemon juice)
  • Lemon slices and lettuce leaves

    Mix the dough: Combine all the main ingredients in a large bowl, stirring until combined and pliable. If it's too soft, add a little flour.

    Shape: take a little dough, roll it in the palm of your hand to form neat little balls.

    Baking method: Arrange on a baking tray lined with baking paper, brush with a little oil, bake at 190°C for 20 to 25 minutes until browned and firm.

    Frying method: fry over medium heat until evenly cooked and crispy, drain the oil.

    Serve: Enjoy warm with vegetable tzatziki sauce and a lemon wedge! Your delicious snack is ready to be enjoyed!
