
Salad Microgreens
Microgreens Salad is a healthy dish that highlights the deliciousness and nutritional richness of young, still very tender vegetable shoots! These micro vegetables have a much higher concentration of vitamins and antioxidants than mature vegetables, with a fresh, slightly sweet and spicy taste, and a very beautiful and colorful appearance. Served fresh with side vegetables, crunchy nuts, and a light vinaigrette dressing, with no animal ingredients whatsoever. Perfect as a sumptuous appetizer, a side dish to a main meal, or an instant, refreshing nutritional boost!

🛒 Ingredients
- Two handfuls of mixed micro greens (can be micro lettuce, red radish, purple cabbage, sunflower, or baby spinach)
- 1/2 fresh tomato, thinly sliced or halved
- 1/4 avocado, thinly sliced
- 30 grams of roasted pine nuts, cashews, or pumpkin seeds
- 2 tablespoons of extra virgin olive oil
- One tablespoon of apple cider vinegar or lemon juice
- 1/2 teaspoon maple syrup or coconut sugar
- A pinch of sea salt and ground black pepper
- A few very finely chopped shallots (optional)

Prepare the ingredients: make sure all the micro vegetables have been washed clean and drained until completely dry so that the sauce is not runny.

Make the sauce: mix all the sauce ingredients in a small bowl, whisk until combined and the texture is smooth.

Assemble the salad: arrange the vegetables on a plate or serving bowl, arrange the tomatoes, avocado, and sprinkle the nuts/seeds beautifully on top.

Serve: Drizzle with the sauce just before serving to keep the microgreens crisp and their nutrients intact. Your delicious meal is ready to be enjoyed!
