🛒 Ingredients
- 100 grams of quinoa or brown rice, wash thoroughly and boil until tender.
- One medium eggplant, diced
- One red/yellow bell pepper, cut into squares
- 1/2 chayote or zucchini, cut lengthwise
- 50 grams of soft boiled white beans or horse beans
- One fresh tomato, diced
- 1/2 cucumber, diced
- 30 grams seedless black olives, coarsely sliced
- Lettuce or arugula leaves as a base
- 3 tablespoons of pure olive oil (for dressing and seasoning)
- One tablespoon of balsamic vinegar or lemon juice
- One clove of finely grated garlic
- 1/2 teaspoon dried oregano, salt, and black pepper
- A few sesame seeds or grated vegetable cheese (optional)

Grill the vegetables: coat the eggplant, peppers, and zucchini with a little oil, salt, and oregano. Bake in the oven at 190%C for 20 to 25 minutes until cooked through and the edges are brown.

Make the dressing: mix the olive oil, vinegar, garlic and remaining spices until well combined.

Assemble the bowl: arrange the rice/quinoa at the bottom of the bowl, then arrange the roasted vegetables, nuts, tomatoes, cucumber, olives and fresh leaves in groups to make it look pretty.

Serve: Drizzle with the sauce just before serving, sprinkle with toppings if desired, and stir well before serving. Your delicious meal is ready to be enjoyed!
