Shepherd's Pie It's a legendary British and Irish comfort dish now served in a completely 100% plant-based version! This dish consists of a base layer of stir-fried lentils, beans and vegetables in a thick, spiced sauce. Which is then tightly covered with a layer of creamy mashed potatoes, then baked until the surface is browned and slightly crispy. Without meat or other animal products, the flavor remains deeply savory, the texture is perfectly blended and it is very warming and very filling!

🛒 Ingredients
- 150 grams of red or brown lentils, soak then boil until soft
- One carrot, cut into small cubes
- One stalk of celery, finely chopped
- 1/2 onion, chopped
- 2 cloves garlic, chopped
- 100 grams of coarsely chopped mushrooms
- 2 tablespoons tomato sauce
- 300 ml vegetable stock
- 1/2 teaspoon dried Thyme, Rosemary, black pepper, and salt
- Dissolve one tablespoon of cornstarch in a little water
- 500 grams of potatoes, peeled, boiled and then mashed
- 3 tablespoons warm plant milk
- 2 tablespoons vegan butter
- A pinch of salt and pepper

Make the filling: sauté the onions, carrots, celery, and mushrooms until softened. Add the lentils, spices, tomato sauce, and stock. Bring to a boil, add the cornstarch mixture, and stir until the sauce thickens. Pour into a heatproof container.

Make the top layer: mix the mashed potatoes with milk, butter, salt and pepper until smooth and creamy. Spread evenly over the filling, making a line pattern with a fork if desired.

Bake: Bake in an oven at 180%C for 25 to 30 minutes, until the surface is browned and the edges are bubbling.
