Calentado It is Colombia's most beloved everyday dish that was once a clever way to use up leftover rice and red beans but is now prepared using 100% plant-based ingredients! This dish combines white rice and red beans that are re-cooked until warm and the spices blend perfectly, served with grilled arepa, fried plantains and fresh accompaniments. Without animal ingredients, it still tastes delicious, comforting, very filling and maintains the authenticity of a warm and familiar homey taste on the tongue!

🛒 Ingredients
- Two cups of cooked white rice (can be leftover rice from yesterday)
- 1.5 cups of soft boiled red beans with broth
- One onion, finely chopped
- 2 cloves garlic, finely chopped
- One tomato, diced
- 1/2 teaspoon ground cumin, salt and black pepper to taste
- 2 tablespoons vegetable oil
- Two vegetable corn arepas
- One plantain, cut obliquely and fried
- Sliced avocado, fresh tomato or lime

Sauté the spices: Heat the oil, sauté the onions until softened, add the garlic and tomatoes until fragrant and the tomatoes are crushed. Add the cumin, salt, and pepper.

Cook the beans: add the red beans and the sauce, cook briefly until it boils again

Combine the rice: Add the white rice and stir gently until the rice is evenly coated with the peanuts and spices and is evenly warm. Adjust the seasoning.

Serve: Arrange on plates, garnish with grilled arepa, fried plantain, and fresh avocado slices. A Colombian specialty is ready to be enjoyed!
