🛒 Ingredients
- One cup of white rice, cooked into soft rice
- 200 grams of dried red beans, soak then boil until soft
- One ripe plantain, cut obliquely
- One avocado, split and sliced
- 150 grams of ground tempeh, shredded oyster mushrooms, or textured vegetable protein
- 1/2 onion, finely chopped
- Two cloves of garlic, finely chopped
- One tomato, diced
- One carrot, cut into small cubes
- Sufficient cooking oil
- 1/2 teaspoon cumin, sweet paprika, salt and pepper
- Banana or lettuce leaves for serving
- Tomato sauce or vegetable hot sauce (optional)

Cook the beans: boil the red beans until soft, leaving a little of the broth to thicken. Saute the onions and tomatoes, add the peanuts and spices, cook briefly until the spices are absorbed.
