Farofa

Farofa is a very iconic side dish and a must on the Brazilian dinner table! It's served completely 100% plant-based! Made from coarse cassava flour that is slowly sautéed with savory spices, onions, and herbs until golden brown and has a crunchy, sandy texture. Without using animal fat or other ingredients from animals, this dish still maintains its distinctive savory taste and unique texture and is very suitable to be sprinkled on rice, black beans. Or as an accompaniment to other main dishes to add to the deliciousness!

🛒 Ingredients

  • 250 grams of coarse cassava flour (farofa flour)
  • 3 tablespoons vegetable oil or vegan butter
  • 1/2 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • One stalk of spring onion, finely sliced
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon mushroom stock (optional)
  • 50 grams of coarsely chopped roasted cashew nuts or peanuts (optional)

    Sauté the spices: Heat the oil/vegan butter in a large skillet over medium heat. Add the onion and sauté until softened, then add the garlic and sauté until fragrant.

    Add the flour: Gradually add the cassava flour while continuing to stir until evenly mixed with the spices. Add salt, pepper, and mushroom stock.

    Cook until crispy: Reduce heat, stirring constantly, for 10 to 15 minutes, until the flour turns a rich brown color and the texture becomes evenly crispy. Be careful not to burn.

    Finish: add chopped peanuts and green onions, stir briefly then turn off the heat

    Serve: let cool slightly, serve as a side dish with rice, black beans or other dishes!
