Salada de Batata It is the most popular and beloved side dish in Brazil, often present on the daily dinner table as well as at parties. A combination of soft boiled potato pieces, crunchy vegetables, coated in a savory creamy sauce that tastes just right without mayonnaise, eggs, or animal dairy products. The texture is soft but still has a crunchy sensation, the taste is fresh and savory, perfect served cold as an accompaniment to rice, or eaten directly as a filling snack!

🛒 Ingredients
- 4 medium potatoes, peeled and diced
- One carrot, cut into small cubes and boiled briefly
- 1/2 cup boiled peas
- Two stalks of spring onions, finely sliced
- One pickled cucumber, cut into small dice (optional)
- 4 tablespoons vegetable mayonnaise
- One tablespoon of plant-based milk or lime juice
- 1/2 teaspoon garlic powder
- To taste salt, black pepper and a little sugar
- A little chopped parsley for sprinkling

Boil the vegetables: Boil the diced potatoes until tender but not falling apart, then drain and let cool to room temperature. Boil the carrots and peas briefly, then drain.

Make the sauce: mix the plant-based mayonnaise, milk/lime, and seasonings until smooth and thick enough to taste.

Mix everything: put the potatoes, carrots, peas, spring onions and pickles in a large bowl. Pour the sauce and stir gently until evenly mixed.

Let it sit: put it in the refrigerator for at least 30 minutes so that the spices can be absorbed and the taste is fresher.
