
Brazilian Black Beans & Rice
This is the most iconic dish and a daily staple of Brazilians, it is served in a 100% plant-based version! Combining fragrant, soft white rice with black beans that are slowly cooked until soft and absorb the savory spices, the thick, reddish-brown sauce is appetizing. Without meat or animal products, this dish is still rich in plant-based protein, very filling and maintains the authentic taste and warmth of Brazilian cuisine that everyone loves.

🛒 Ingredients
- 250 grams of dried black beans, soak in water for at least 4 hours or overnight
- 1/2 onion, finely chopped
- 2 cloves garlic, finely chopped
- One stem tomato, diced
- One tablespoon of vegetable oil or coconut oil
- 1/2 teaspoon ground cumin, salt and black pepper to taste
- 500 to 600 ml water or vegetable stock
- A few bay leaves (optional)
- 2 cups white rice, 3 to 4 cups water, and a pinch of salt (for rice)

Cook the beans: boil the soaked black beans in new water until boiling, discard the first cooking water then replace with clean water. Cook until the beans start to soften

Saute the spices: in a separate pan, saute the onions and garlic until fragrant, add the tomatoes and spices until wilted. Pour into a saucepan, add the bay leaves, and cook until the sauce thickens and the spices are fully absorbed. Adjust the seasoning.

Cook rice: wash the rice clean, cook with water and salt until cooked and soft.

Serve: Arrange the rice on a plate, and pour the black beans and sauce over or alongside the rice. Sprinkle with fresh cilantro if desired. Enjoy a delicious Brazilian specialty!
