🛒 Ingredients

  • Two fresh cucumbers, thinly sliced into circles or lengthwise
  • 1/2 shallot or small onion, thinly sliced
  • One red/green chili (optional, sliced diagonally)
  • A little coriander leaves or finely sliced spring onions
  • 2 tablespoons apple cider vinegar/rice vinegar/white vinegar
  • One tablespoon of vegetable soy sauce
  • One teaspoon of granulated sugar or coconut sugar
  • 1/2 teaspoon fine salt
  • One teaspoon of sesame oil
  • A few toasted sesame seeds or chopped peanuts for sprinkling

    Prepare the cucumber: sprinkle the cucumber slices with a little salt, let them sit for 5 minutes to drain the excess water, then squeeze them gently and drain. This keeps the cucumbers crisp and not watery.

    Make the sauce: mix all the sauce ingredients in a small bowl, stir until the sugar and salt are completely dissolved.

    Mix: Place the cucumber, shallots, and chilies in a large bowl. Pour in the sauce and stir gently.
