Stuffed Cabbage Rolls

This dish is completely plant-based, Replacing the meat filling with a mixture of brown rice, beans and vegetables that I like the taste and texture. Tender cabbage leaves are neatly wrapped around a savory filling, then slowly cooked in a fresh, tangy tomato sauce and fragrant spices. 🛒 Ingredients

  • One medium-sized cabbage (choose whole, wide leaves)
  • Enough water + one teaspoon of salt for boiling
  • 100 grams of boiled brown rice (or white rice/quinoa)
  • 50 grams of boiled red beans/soybeans, coarsely ground
  • One carrot, finely grated
  • 2 cloves garlic, finely chopped
  • One onion, finely chopped
  • 3 tablespoons chopped roasted peanuts (optional)
  • One tablespoon nutritional yeast (for a cheesy, savory flavor, optional)
  • 1/2 teaspoon black pepper, 1/2 teaspoon oregano, salt to taste
  • One tablespoon of olive oil for sautéing
  • Three large red tomatoes, pureed or 200 grams of vegetable tomato sauce
  • One clove of garlic, crushed
  • One tablespoon of vegetable soy sauce
  • 1/2 teaspoon granulated sugar
  • A little water, salt and pepper to taste

    Prepare the cabbage: Bring salted water to a boil, add the whole cabbage for a moment, then remove it. Gently peel off the leaves one by one to avoid tearing them. Drain until cool.

    Make the filling: saute the onion and garlic until fragrant. Add carrots, cook briefly until wilted. Add the boiled rice, peanuts, and spices, stir well, and adjust the seasoning. Remove from heat and let cool slightly.

    Roll: take a cabbage leaf, put 1 to 2 tablespoons of filling at the base of the leaf, fold the left and right sides inwards, then roll it tightly until finished.

    To cook: Arrange the cabbage rolls in a flat pan. Pour in the tomato sauce, mixed with all the ingredients and a little water, until the rolls are partially submerged. Cover the pan, cook over low heat for 25 minutes until the spices are absorbed and the cabbage is soft.

    Serve warm with celery leaves or roasted peanuts on top. Enjoy!
