Salad Couscous

This Couscous Salad is a healthy, light yet filling dish, completely plant-based with no animal ingredients whatsoever. Combined with colorful fresh vegetables, fragrant spices and fresh lime juice sauce. Very practical to make, does not require long cooking, rich in fiber and nutrients, suitable for lunch, provisions or side dishes. The balanced sweet and sour taste can be adjusted to your taste by adding your favorite vegetables or nuts!

🛒 Ingredients

  • 150 grams of instant couscous
  • 200 ml hot water/vegetable stock
  • One red tomato, cut into small cubes
  • One cucumber, remove seeds and cut into cubes
  • 1/2 red/yellow bell pepper, cut into small pieces
  • 3 tablespoons of boiled sweet corn
  • 2 tablespoons raisins or date pieces (optional, for natural sweetness)
  • 2 tablespoons finely chopped parsley/coriander leaves
  • 2 tablespoons of roasted peanuts, chopped betel nuts (optional)
  • 3 tablespoons olive oil (for dressing)
  • 2 tablespoons lime/lemon juice
  • 1 clove of finely chopped garlic
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika powder
  • Salt and black pepper to taste

    Put the couscous into a heatproof container, pour in hot water/vegetable stock, cover tightly and let stand for 5 to 7 minutes until the water is completely absorbed. Stir gently with a fork to break down the couscous grains.

    Mix all the fresh vegetables, corn, raisins and herbs in a container with the Couscous

    Combine all the sauce ingredients in a small bowl, stir well, and then pour over the couscous mixture. Stir gently until all the ingredients are evenly coated.

    Sprinkle roasted peanuts on top. Serve immediately warm or refrigerate for 30 minutes to further enhance the flavors and freshen up! The salad is ready to enjoy!
