
Mekitsa vegan
Mekitsa is a traditional snack that usually uses eggs or animal milk! This vegan version is made entirely from plant-based ingredients but still maintains the crispy exterior, soft and airy interior, and distinctive sweet and savory flavor. 🛒 Ingredients
- 250 grams of medium protein wheat flour
- One teaspoon of instant yeast
- One tablespoon of granulated sugar
- 1/2 teaspoon salt
- 200 ml warm water (can be replaced with vegetable milk such as soy milk/thin coconut milk for a more savory taste)
- One tablespoon of vegetable oil + enough oil for fryingOne tablespoon of vegetable oil + enough oil for frying
- Filling: fruit jam, powdered sugar or maple syrup to taste

Mix warm water, sugar and yeast, stir well then let stand for 5-10 minutes until foamy (a sign that the yeast is active)

In another bowl, combine the flour and salt. Pour the mixture back in slowly while stirring. Add 1 tablespoon of vegetable oil.

Knead the dough until it's smooth, pliable, and doesn't stick to your hands. Cover the bowl with a clean cloth and let it rest for 40 minutes, or until the dough has doubled in size.

Heat enough oil over medium heat. Take a portion of the dough and gently flatten it with oiled hands until it forms a flat ball.

Fry the dough until it puffs up, turns golden brown, and is evenly cooked on both sides. Remove and drain the oil.

Serve warm with jam filling or a sprinkling of powdered sugar. Snacks are ready to be enjoyed!
