Pesto Swiss Chard Almond

🛒 Ingredients

  • 200 grams of penne pasta or similar pasta (choose 100% plant-based)
  • One bunch of Swiss chard leaves (take the leaves only, wash thoroughly)
  • 1/2 cup peeled almonds, lightly toasted
  • 2 cloves of garlic
  • 3 tablespoons of extra virgin olive oil3 tablespoons of extra virgin olive oil
  • 2 tablespoons pasta cooking water
  • To taste, add sea salt, ground black pepper and a little lime juice.
  • Grated vegetable cheese for topping (optional)

    Boil the pasta: Cook the pasta in boiling, lightly salted water until al dente. Reserve some of the cooking water, then drain the pasta.

    Make the dressing: place the Swiss Chard leaves, toasted almonds, garlic, olive oil, salt, pepper, and lime juice in a blender. Blend until smooth and thick, like pesto sauce. Add more pasta water if it's too thick.

    Mix: Heat the pan briefly, pour in the pureed sauce, then add the drained pasta. Stir quickly until the pasta is evenly coated with the sauce.

    Serve: transfer to a serving plate, sprinkle grated vegetable cheese on top and enjoy while warm!
