🛒 Ingredients
- 2 to 3 heads of endive lettuce, chopped
- One ripe but firm pear, cored and thinly sliced lengthwise
- A handful of other lettuce leaves (watercress/romaine lettuce) as a base
- 30 grams of walnuts or cashew nuts, roughly chopped and lightly roasted
- 30 grams of vegetable cheese or grated vegetable cheese (optional)
- 2 tablespoons olive oil
- One tablespoon of balsamic vinegar or apple cider vinegar
- One teaspoon maple syrup or powdered sugar
- A little salt and ground black pepper
👩🍳 Instructions
- 1
Prepare the vegetables: wash the endive and other lettuce thoroughly, then drain thoroughly to prevent the sauce from becoming runny. Arrange on a serving platter.
- 2
Assemble the filling: Arrange the pear slices beautifully on top of the lettuce. Sprinkle with the toasted peanuts and pieces of plant-based cheese.
- 3
Make the sauce: mix all the sauce ingredients in a small bottle, cover and shake until well mixed and thickened.
- 4
Serve: Drizzle with the dressing just before serving to keep the vegetables crisp and the pears from discoloring. The salad is ready to be enjoyed.
