🛒 Ingredients

  • 1/2 cup dried koinoa, washed thoroughly
  • One cup of water or vegetable stock
  • One ripe avocado, diced
  • One carrot, roughly grated or cut into small pieces
  • One handful of baby spinach or watercress, roughly chopped
  • 1/4 cup coarsely chopped almonds or walnuts, lightly toasted
  • One tomato, diced (optional)
  • 2 tablespoons of extra virgin olive oil
  • One tablespoon of lime or lemon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • A pinch of cumin or coriander powder (to taste)

    Boil the quinoa: put the quinoa and water in a saucepan, bring to a boil. Reduce heat, cover, and cook for 15 minutes, until the water is absorbed and the quinoa is cooked through. Remove from heat, stir gently, and let cool to room temperature.

    Prepare the vegetables: combine the cooled Quinoa with the diced avocado, carrots, spinach, tomatoes and roasted peanuts in a large bowl.

    Make the sauce: whisk all the sauce ingredients in a small bowl until combined and thickened.

    Mix and serve: Pour the dressing over the salad mixture, tossing gently to avoid crushing the avocado. Adjust the seasoning, then serve immediately or refrigerate if you prefer to eat it cold.
