🛒 Ingredients
- 200 grams of wheat biscuits or coconut biscuits (crush until crumbs form)
- 50 grams of dry grated coconut (part for the dough)
- 80ml thick coconut milk or warm vegetable milk
- 3 tablespoons maple syrup, powdered sugar or coconut sugar.
- 2 tablespoons liquid coconut oil
- One teaspoon of pure vanilla extract
- 50 grams of dry grated coconut (to coat the cake balls)
👩🍳 Instructions
- 1
Mix the batter: In a large bowl, add the biscuit crumbs, grated coconut, and sugar/syrup. Mix well.
- 2
Form the dough: pour in the coconut milk, coconut oil and vanilla extract little by little while stirring until the dough comes together and can be pressed. If it is too soft, add a little biscuit crumbs, if it is too dry, add a little coconut milk.
- 3
Form a ball: Take a small amount of dough, about the size of a teaspoon, and roll it in your palm until smooth. Repeat this process until all the dough is used up.
- 4
Coating: roll each ball in the desiccated coconut until the entire surface is evenly covered.
- 5
Let it rest: arrange the cake balls in a covered container, store in the refrigerator for at least 30 minutes so that the texture is denser and the flavors blend perfectly.
- 6
Serve: No-Bake Vanilla Cake Bites are ready to be enjoyed as a healthy or sweet snack anytime!
