Manggo Burfi Vegan

Enjoy the deliciousness of this soft, sweet, and tropical Indian dessert in a 100% vegan version! Manggo Burfi Vegan is a sweet creation inspired by the classic burfi, made from a combination of fresh, sweet ripe mango flesh, cashew flour and thick coconut milk. Without using animal milk or eggs at all. The texture is dense but melts in the mouth, is naturally golden yellow in color from the mango and has a balance of sweetness and a very strong mango aroma. Perfect as a special snack, dessert or signature treat, without compromising on authentic deliciousness!

🛒 Ingredients

  • 300 grams of sweet ripe mango flesh (mash until smooth)
  • 150 grams of cashew flour or ground cashew nuts
  • 100 grams of coconut sugar or fine granulated sugar
  • 100 ml thick coconut milk or coconut cream
  • 2 tablespoons coconut oil or vegan margarine
  • 1/4 teaspoon ground cardamom (for a distinctive Indian aroma)
  • A pinch of fine salt (to balance the taste)
  • A few chopped cashew nuts for garnish (optional)

    Heat coconut oil in a non-stick skillet over low heat. Add the mango puree and cook gently for 5 to 7 minutes, until the water content has reduced slightly and the texture has thickened.

    Add the thick coconut milk, coconut sugar, ground cardamom, and salt. Stir well until the sugar is completely dissolved.

    Add cashew flour little by little while continuing to stir quickly so that it doesn't clump.

    Continue cooking over very low heat, stirring constantly, for 15 to 20 minutes, until the mixture becomes very thick and solid, and begins to separate from the sides of the pan.

    Prepare a rectangular baking dish or pan that has been lightly greased with coconut oil. Pour the burfi mixture into it, smooth the surface evenly, and press down firmly. Sprinkle chopped cashew nuts on top.

    Let it sit at room temperature until it is completely cool and hardens, then put it in the refrigerator for at least 1 hour.

    Remove from the container and cut into squares or diamonds, as desired. Your vegan mango burfi is ready to serve.
