🛒 Ingredients
- 500 grams of potatoes, peeled and cut into large cubes
- 300 grams of fresh green vegetables (can be mustard greens, cabbage, or water spinach), wash thoroughly and roughly chop.
- 2 tablespoons vegan margarine or olive oil
- 3 to 4 tablespoons warm plant-based milk (soy, almond, or coconut milk)
- 1/2 finely chopped onion
- 2 cloves garlic, finely chopped
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon sea salt
- A pinch of ground nutmeg (optional, for a distinctive European aroma)
- A little chopped parsley for sprinkling
- Vegan pepper sauce or fried tofu slices as a side dish

Boil the potato pieces in boiling, lightly salted water for 15 to 20 minutes, until they are completely soft and easy to mash. Drain the water.

In a separate pan, boil or steam the greens for just two to three minutes, until they are wilted but still brightly colored. Drain and squeeze out some of the water to remove the excess liquid.

Heat vegan margarine or olive oil in a small pan, sauté the onion and garlic until fragrant and wilted.

Place the cooked potatoes in a large bowl and mash them until they're still hot. Gradually add the vegetable milk, continuing to mash until smooth and thick.

Add the sautéed onions, green vegetables, black pepper, ground nutmeg, and the remaining salt. Stir well until all ingredients are thoroughly combined and the spices are absorbed.

Correct the taste, if it is right, turn off the heat.
