Teriyaki Tofu Rice Bowl

🛒 Ingredients

  • One block (350 grams) of firm white tofu, cut into 2 cm cubes
  • One tablespoon of cornstarch (to coat the tofu to make it crispy)
  • One small head of fresh broccoli, cut into small florets
  • 2 bowls of warm white rice (as the base of the dish)
  • 2 tablespoons vegetable oil (for frying tofu)
  • One teaspoon of toasted sesame seeds (for the final sprinkle)
  • 1/4 cup (60 ml) soy sauce or tamari (gluten-free)
  • 1/4 cup (60 ml) clean water
  • 2 tablespoons maple syrup or liquid cane sugar (as a natural sweetener Vegan)
  • One teaspoon fresh ginger (finely grated)
  • 1 clove of garlic (finely grated)
  • One teaspoon of cornstarch (dissolve in 1 tablespoon of cold water to thicken)

    Dry and coat the tofu: Pat the diced tofu dry with a paper towel until completely dry. Place the tofu in a bowl, then sprinkle with 1 tablespoon of cornstarch. Shake the bowl gently until the entire surface of the tofu is coated thinly and evenly with flour (this is the secret to getting crispy tofu without frying it).

    Steam broccoli: Blanch or steam the broccoli in boiling water with a pinch of salt for 2 to 3 minutes, until tender and crispy, and bright green. Remove, drain, and set aside.

    Fry the tofu: heat vegetable oil in a flat pan over medium high heat. Arrange the tofu cubes in a pan, fry for 5 to 6 minutes, turning occasionally, until each side is golden brown and crispy. Remove the tofu and drain from the oil.

    Cook the teriyaki sauce: in the same pan (clean out any excess oil), combine the soy sauce, water, maple syrup/ginger sugar and grated garlic. Bring to a boil over medium heat. Once boiling, pour in the cornstarch solution while stirring quickly. Cook for 1 to 2 minutes until the sauce thickens and becomes glossy.

    Coat the tofu with sauce: put the crispy fried tofu back into the pan containing the thick teriyaki sauce. Stir gently until the entire surface of the tofu is evenly coated with the sweet, glossy teriyaki sauce. Turn off the heat.

    Arrange in a bowl: -prepare a round bowl then put warm white rice in the bottom of the bowl- arrange steamed green broccoli on one side of the bowl and arrange shiny teriyaki tofu on the other side- Sprinkle the top of the tofu with toasted sesame seeds evenly.

    Serve: Serve the Teriyaki Tofu Rice Bowl while it's still warm with chopsticks on the side. A healthy and delicious meal is ready to be enjoyed.
