
Raita
Raida is a traditional dipping sauce made from plant-based yogurt (such as coconut or plain soy yogurt) combined with fresh, crunchy grated cucumber. Enriched with warm spices such as roasted cumin powder, the freshness of coriander and mint leaves, and a pinch of black salt to provide a distinctive authentic aroma. It is perfect served cold as a neutralizer of the spicy taste when enjoying curry dishes, biryani, or enjoyed directly as a dip for your flatbread.

🛒 Ingredients
- One cup (250 grams) of plain vegan yogurt (soy coconut or almond based)
- 1/2 medium cucumber (peel the skin, remove the seeds, then grate coarsely)
- 2 tablespoons fresh coriander leaves, finely chopped (reserve a few for garnish)
- One tablespoon of fresh mint leaves, finely chopped
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/4 teaspoon black salt (gives an authentic Indian taste) or regular sea salt
- A pinch of chili powder or paprika powder (for the final sprinkle on top)

Squeeze the cucumber juice (important step): place the grated cucumber on a sieve or clean cloth. Gently use your hands to squeeze out excess water from the cucumber (this is done so that the raita sauce remains thick, creamy, and does not become too runny when mixed)

Mix the main ingredients: In a serving bowl, add the plain vegan yogurt, grated cucumber, chopped cilantro, and mint leaves. Mix well with a spoon.

Add spices: add cumin powder, coriander powder and black salt. Stir again until all the spices are evenly mixed with the vegan yogurt. Taste and adjust the saltiness to your liking.

Tyas and finishing touches: sprinkle a little roasted cumin powder, a pinch of chili powder on top for a touch of red color, and place a few fresh coriander leaves or mint Right in the center of the bowl to give a beautiful green aesthetic look

Chill and serve: Place the bowl in the refrigerator for at least 15 minutes before serving. This cool and super refreshing pegan raita is ready to be enjoyed as an accompaniment to your favorite warm curry or biryani!
