
Greek Walnut Cake

🛒 Ingredients
- 150 grams of walnuts, roughly chopped
- 200 grams of all-purpose flour
- 100 grams of fine semolina flour or can be replaced with regular wheat flour
- 100 grams of granulated sugar or organic cane sugar
- 1 tablespoon cinnamon powder
- 1/2 teaspoon clove powder
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 120ml light olive oil or vegetable oil
- 200ml soy milk
- 1 teaspoon vanilla extract
- Enough powdered sugar for sprinkling on top of the cake
- 100ml clean water
- 150 grams of granulated sugar as an ingredient for orange syrup
- 1 whole cinnamon stick
- 1 lemon or sweet orange peel, take the yellow or orange part only
- 1 tablespoon lemon juice

Make the syrup first: combine all the syrup ingredients, water, sugar, cinnamon stick, orange zest and lemon juice in a small saucepan.Simmer over medium heat for 5 to 8 minutes until the sugar dissolves and the syrup thickens slightly.Turn off the heat and let the syrup boil completely (cold syrup must be poured over the cake that has just been baked and is still hot so that it is absorbed perfectly)

Open and baking tray preparation: preheat oven to 180% C. Grease a medium-sized cake pan with a little olive oil and dust lightly with flour to prevent sticking.

Mix dry ingredients: In a large bowl, combine the flour, semolina flour, baking powder, baking soda, ground cinnamon, ground cloves, granulated sugar, and chopped walnuts. And stir until well blended

Mix the wet ingredients and stir: pour the olive oil, soy milk, and vanilla extract into the dry mixture. Stir slowly using a wooden spatula until all the ingredients are combined and there are no lumps of flour (do not stir for too long so that the cake remains soft).

Bake the cake: Pour the batter into the prepared pan and smooth it out. Bake in the oven for 35 minutes, until golden brown.Test by poking a toothpick in the center of the cake and if it comes out clean, it means the cake is cooked.

Drizzle with syrup: Remove the cake while it's still hot from the oven. Pierce the surface of the cake evenly with a skewer or fork.Immediately pour the cooled sweet syrup slowly over the entire surface of the hot cake. Let the cake sit and absorb all the syrup for at least 1 to 2 hours before cutting.

To serve: Sprinkle the top of the cake with powdered sugar using a fine sieve until it's evenly white like snow. Cut the cake into squares or diamonds and serve immediately!
