🛒 Ingredients
- 450 grams of mini potatoes
- 1 tablespoon cooking oil
- 1 teaspoon roasted mustard seeds
- 4 tablespoons soy sauche or tamari
- 2 tablespoons Korean rice syrup or maple syrup (as a substitute for honey)
- 1 tablespoon granulated sugar or liquid palm sugar
- 3 cloves of garlic (finely chopped)
- 1 cup (240ml) clean water or warm vegetable stock
- 1 teaspoon sesame oil
- 1/2 teaspoon gochuru / red chili powder (optional, if you want a little bit of a warm, spicy sensation)

Potato preparation; make sure to wash the mini potatoes thoroughly under running water to remove any remaining soil as we will be cooking them with the skin on. Pat the potatoes dry with a paper towel.

Sauté potatoes; heat 1 tablespoon of cooking oil in a skillet over medium heat. Add whole mini potatoes and sauté for 4-5 minutes, until the skins look slightly wrinkled And it turns a slightly brownish color. This process keeps the potato skin firm and prevents it from falling apart when boiled.

Add the sauce and water; pour the water/vegetable stock, soy sauce, rice/maple syrup, sugar, minced garlic, and chili powder (if using) into the pan with the potatoes. Stir well.

Bring to a boil; bring the water to a boil, then reduce the heat to medium-low. Cover the pan and let the potatoes cook slowly for 12-15 minutes, until the water has reduced by half And the potatoes become soft when pierced with a fork.

Caramelize the sauce: Remove the lid from the pan and turn the heat up slightly. Stir the potatoes constantly to coat them evenly in the sauce, which is starting to thicken and become glossy. Cook until the sauce reduces and leaves a little thick liquid at the bottom of the pan.

The final touch: turn off the heat. Immediately drizzle with warm sesame oil and sprinkle sesame seeds over the potatoes. Stir quickly once more to combine the aromas.
