Potato Curry

🛒 Ingredients

  • 2 medium-sized potatoes (peeled, then cut into 2cm cubes)
  • 3/4 cup sweet peas, fresh or frozen
  • 1 large handful of fresh spinach leaves
  • 1 plate of warm white rice
  • 1 tablespoon vegetable oil or coconut oil (for sauteing)
  • 1/2 onion (finely chopped)
  • 2 cloves of garlic (finely chopped)
  • 1 piece of fresh ginger (finely grated)
  • 1 tablespoon curry powder or garam masala seasoning
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste
  • 200ml liquid coconut milk (instant coconut milk)
  • 100 ml boiled water or vegetable stock

    Sauté the base spices; heat the vegetable oil in a wok or saucepan over medium heat. Add the chopped onion, garlic, and grated ginger. Stir-fry for 3-4 minutes until wilted, soft and fragrant.

    Fry the ground spices; reduce the heat, add the curry powder, turmeric powder, and cumin powder. Stir quickly for 30 seconds to release the aroma of the spices without burning them.

    Cook the potatoes; add the diced potatoes to the pan. Stir well for 1-2 minutes until the potatoes are evenly coated with the spices.

    Boil until tender; pour in water/vegetable stock and liquid coconut milk. Add salt and black pepper to taste. Bring to a boil, then cover the pan and reduce the heat. Cook for 15 minutes, or until the potatoes are tender when pierced with a fork.

    Add the peas and spinach; remove the lid and add the peas and fresh spinach leaves. Stir well for 2-3 minutes until the peas are cooked through And the wilted spinach leaves blend with the curry sauce which is starting to thicken. Turn off the stove.

    Serve: Prepare a serving plate, arrange warm white rice on one side, and pour warm spinach and pea potato curry on the other side. Serve while still warm.
