🛒 Ingredients
- 200 grams of wet vegan yellow noodles
- 150 grams of tempeh
- 1 bunch of pak choy or green mustard greens
- 1/2 yellow or red bell pepper
- 1/2 cup fried peanuts
- 1 lime
- 2 tablespoons of cooking oil
- 3 cloves of garlic
- 2 cloves of shallots
- 1 small piece of ginger
- 2 tablespoons sweet soy sauce
- 1 tablespoon Japanese soy sauce or tamari
- 1 teaspoon sesame oil
- 1/2 teaspoon mushroom stock powder
- 1/4 teaspoon ground white pepper
- 2 tablespoons warm water (to dissolve the sauce)

Fry the tempeh: Heat a little oil in a frying pan. Fry the tempeh pieces until golden brown and crispy on the outside. Remove, drain, and set aside.

Mix the sauce; in a small bowl, combine the sweet soy sauce, salty soy sauce, sesame oil, mushroom stock powder, white pepper, and warm water. Stir well and set aside.

Sauté the spices; use the same pan, adding a little oil if necessary. Sauté the garlic, shallots, and ginger over medium heat until fragrant and lightly browned.

Add the vegetables; increase the heat. Add the sliced bell peppers and bok choy stems first, as they take a little longer to cook. Stir-fry for 1-2 minutes, then add the bok choy leaves, stir quickly until wilted.

Add the noodles and tempeh; add the prepared noodles and fried tempeh into the pan with the vegetables.

Pour the sauce over the noodles and tempeh; drizzle the sauce mixture evenly over the noodles and tempeh. Use a spatula or tongs to quickly stir all the ingredients over high heat for 2-3 minutes until the sauce is absorbed.And the noodles look a bit dry and brownish in color.

Serve: Transfer the warm fried tempeh noodles to a serving plate. Sprinkle with chopped fried peanuts on top for a crunchy texture. And garnish with fresh lime slices on the side, squeeze the lime over the noodles just before eating for a refreshing taste.
