🛒 Ingredients
- 1 gram fresh bean sprouts (clean the ends)
- 100 grams of cabbage (cut into bite-sized cubes)
- 1 medium sized carrot (thinly sliced lengthwise or into matchsticks)
- 1/2 red or green bell pepper (thinly sliced lengthwise)
- 2 cloves of garlic (finely chopped)
- 1 finger length of ginger (finely grated)
- 1 tablespoon cooking oil (for sautéing)
- 2 tablespoons Shoyu (Japanese soy sauce) or tamari (gluten-free)
- 1 tablespoon sesame oil (for a distinctive aroma)
- 1 teaspoon powdered mushroom stock (substitute for flavoring)
- 1/2 teaspoon granulated sugar (to balance the taste)
- 1/4 teaspoon white pepper or ground black pepper
- 1 tablespoon clean water (or vegetable stock)

Prepare the vegetables; make sure all the vegetables are washed clean and dried well before cooking. Cut the vegetables into uniform sizes so they cook together.

Mix the sauce; in a small bowl, combine the soy sauce, sesame oil, mushroom stock powder, sugar, pepper, and water. Stir well until the sugar dissolves, then set aside.

Sauté the spices; heat the cooking oil in a skillet over medium-high heat. Add the chopped garlic and grated ginger. Stir-fry quickly for 30 seconds until fragrant (do not let them burn).

Add the hard vegetables; add the carrots first as they take longer to cook. Stir-fry for 1-2 minutes.

Add the remaining vegetables; increase the heat to high. Add the cabbage, bell pepper, and bean sprouts to the pan. Stir-fry quickly, turning the pan to distribute the heat evenly, for about 1-2 minutes.

Pour the sauce: pour the prepared sauce mixture around the edges of the hot pan. (This technique caramelizes the sauce slightly and gives it a delicious smoky aroma.)

Quickly stir all the vegetables for 1 minute until the spices are evenly distributed and the vegetables are slightly wilted but still have a crisp texture. Turn off the heat.
