Vegan Barbecue Lentil Loaf

Vegan Barbecue Lentil Bread is an eco-friendly classic that is incredibly delicious and filling! Made from a combination of vegetable protein in the form of brown lentils, the sweetness of fresh corn kernels, grated carrots, and selected spices, this dish offers a dense and fibrous texture. It is very suitable as the main dish for a warm family dinner.

🛒 Ingredients

  • 2 cups cooced brown or green lentils (well-drained)
  • 1/2 cup sweet corn kernels
  • 1 medium yellow onion (finely chopped)
  • 1 medium carrot (finely grated)
  • 3 cloves garlic (minced)
  • 1/2 cup rolled oats or oat flour (as A binder)
  • 1/4 cup vegan Barbecue sauce (for the mixture)
  • 1tbsp soy sauce or tamari
  • 2 flax eggs (2 tbsp ground flaxseed mixed with 5 tbsp water, lets sit for 5 minutes)
  • 1 tap smoked paprika
  • Salt and black paper to taste
  • 1/2 cup vegan Barbecue sauce
  • 1 tap maple Syrup or brown sugar

    Preheat oven to 190°C. Line a standard-size loaf pan with parchment paper to prevent the dough from sticking and make it easier to remove later.

    Sauté the vegetables; heat a little olive oil in a skillet over medium heat. Sauté the onion, garlic, and grated carrot for about 5 minutes, until softened and fragrant.

    Mash the lentils: Place the cooked and drained lentils in a large bowl. Mash roughly using a fork or potato masher. Leave some of the lentils intact so that the texture of the bread will be more fibrous and dense.

    Mix the mixture; add the sautéed vegetables, sweetcorn kernels, oat flour, flax egg (egg substitute), barbecue sauce, soy sauce, smoked paprika powder, salt and black pepper to the Lentil bowl. Mix well using your hands or a wooden spoon until the dough comes together and can be pressed together.

    First stage bake; Transfer the mixture into the prepared baking dish. Press the dough firmly and smooth the surface using a spatula so that it is solid and does not crumble easily when slicing. Bake in the oven for 35 minutes

    Brush with sauce; while grilling, mix the basting ingredients (barbecue sauce and maple syrup/palm sugar). Remove the pan from the oven after 35 minutes, then spread the sauce mixture evenly over the surface of the dough.

    Bake the second stage; return the pan to the oven and bake for another 15 minutes until the sauce on top is glossy, thickened and slightly caramelized.

    Cool and serve; remove from the oven and let cool in the tin for 10-15 minutes before removing and slicing. This step is crucial to ensure the lentil bread is firm and doesn't fall apart when cut. Ready to serve!
