🛒 Ingredients
- 750 grams of potatoes (choose the type that doesn't fall apart easily)
- 1/2 onion, finely sliced
- 1 stalk of spring onion, thinly sliced
- 1 tablespoon fresh parsley, chopped
- 3 tablespoons apple cider vinegar or white vinegar
- 3 tablespoons olive oil
- 1 teaspoon granulated sugar or coconut sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 100 ml warm potato boiled water
- Slice red bell peppers for fresh color (optional)

Boil the potatoes with their skins on until they are tender (20-25 minutes) Remove, peel while warm, cut into cubes or pieces

Mix vinegar, oil, sugar, salt, pepper, and warm potato water, stir until dissolved.

Pour the seasoning over the potatoes while they are still warm, so that the flavors are perfectly absorbed.

Add the onion, spring onions, paprika, and parsley. Stir gently to prevent the potatoes from breaking up.
