
Ratatouille
A French roasted vegetable dish. It consists of sliced eggplant, chayote, tomatoes, bell peppers, and onions, slowly cooked in a tomato sauce and aromatic spices. It tastes fresh, savory, soft and full of natural vegetable flavors.

🛒 Ingredients
- 1 medium-sized eggplant
- 1 chayote or zucchini
- 2 large tomatoes
- 1 red bell pepper
- 1 yellow/green bell pepper
- 1 onion
- 2 cloves garlic, finely chopped
- 3 tablespoons olive oil
- 4 tablespoons tomato sauce
- 1/2 teaspoon mixed dried leaves (oregano, thyme, basil)
- Salt and pepper to taste

Slice all vegetables into thin rounds with uniform thickness

Heat 1 tablespoon of olive oil, saute the garlic and half the onion until fragrant. Add tomato sauce, season with salt, pepper, spices, stir well, pour into the bottom of a heatproof baking dish.

Arrange the eggplant, pumpkin, tomato, and bell pepper slices in a neat circle over the sauce, covering the entire surface. Sprinkle with the remaining onion and brush with the remaining olive oil.

Cover the pan with aluminum foil, bake the pan in an oven at 180° for 30 minutes. Open the lid, bake for another 10-15 minutes until the vegetables are soft and the surface is slightly browned.
