Soupe au Pistou
A fresh vegetable soup typical of southern France containing a mixture of beans and seasonal vegetables, served with pistou sauce - a mixture of basil, garlic, beans, olive oil. It tastes savory, fragrant and light.

🛒 Ingredients
- 1 liter of vegetable stock
- 80 grams of white beans, soaked then boiled until half cooked
- 1 carrot, diced
- 1 Potatoes, diced
- 1 stalk of celery, finely sliced
- 1 tomato, cut into small pieces
- 60 grams of green beans, cut into short pieces
- 50 grams of fresh green beans
- 1 tablespoon olive oil
- Salt, pepper and a few fresh thyme leaves
- Pistou sauce
- 1 bunch of fresh basil leaves
- 2 cloves of garlic
- 1 tablespoon pine nuts/walnuts
- 3-4 tablespoons olive oil
- A pinch of salt

Heat the oil, sauté the celery and carrots, beans, and stock. Cook for 25-30 minutes until everything is soft. Season to taste.

Blend all the pistou sauce ingredients until smooth and thick.

When ready to serve, stir 1-2 tablespoons of the pistou sauce into the soup, or drizzle it on top. Serve warm.
