🛒 Ingredients
- 500 grams of ripe tomatoes
- 1 medium-sized onion, roughly sliced
- 2 cloves garlic, bruised
- 1 tablespoon olive oil
- 300-350 ml vegetable stock
- 1 tablespoon potato starch or 2 tablespoons cooked rice (for natural thickness)
- 1 teaspoon granulated sugar (optional, to balance the sour taste)
- Salt and pepper to taste
- Fresh basil leaves for garnish

Heat olive oil, saute the onion and garlic until fragrant and wilted

Add the tomatoes, stir briefly, then pour in the vegetable stock. Cook over medium heat for 15-20 minutes until the tomatoes are completely soft.

Add potato starch or cooked rice and stir well. Turn off the heat and let it cool slightly.

Blend the entire mixture with a blender until it is completely smooth and soft.

Pour back into the pan, heat briefly, season with salt, pepper and a little sugar if needed.
