
Vegan Fry-up
A delicious, filling, and fully plant-based full English breakfast. 🛒 Ingredients
- Cherry tomatoes/chopped tomatoes
- Red beans/white beans in tomato sauce
- Fresh mushrooms
- Fresh spinach
- Peas/sweet corn
- Olive oil/vegetable oil
- Salt and black pepper
- Fresh herbs (optional: Thyme/parsley)

Heat a little oil in a skillet. Roast the tomatoes and mushrooms until slightly wilted and lightly browned. Season with salt and pepper. Remove from heat.

In another pan, heat the peanuts in the tomato sauce briefly until warm and thick. Set aside.

Sauté the spinach briefly until wilted (don't overcook, as it will retain its green color). Boil the peas briefly until cooked through.

Arrange all the ingredients neatly on a plate: peanut sauce in a small bowl, arrange the tomatoes, mushrooms, spinach and peas around it.

Sprinkle with a little black pepper and fresh herbs. Serve warm while delicious
