🛒 Ingredients

  • 2 cups peeled green beans
  • 1 bunch of fresh coriander leaves
  • 3 cloves of shallots, sliced.
  • 2 cloves garlic, chopped
  • 1 piece of ginger, grated
  • 1 green chili (optional)
  • 1/2 teaspoon turmeric powder
  • 1/2 cumin seed/cumin powder
  • Salt to taste
  • 1 tablespoon cooking oil/ghee
  • Enough water

    Wash and peel the mung beans, boil them in water until soft and tender. Then set aside.

    Grind coriander leaves, green chilies and a little water until it becomes a smooth green paste.

    Heat oil, sauté shallots, garlic, and ginger until fragrant. Add cumin and turmeric and stir briefly.

    Add the green spice mixture, stir-fry until cooked and the oil starts to separate from the spices.

    Add the boiled mung beans and their broth. Add salt and stir well. Cook over low heat for 10-12 minutes to allow the flavors to blend and the sauce to thicken slightly.

    Adjust the seasoning, remove from heat. Serve warm with white rice or bread.
