Thali India

A complete Indian meal served on a banana leaf or large plate, containing white rice, flatbread (Naan/roti), various types of vegetables, nuts, spicy and sour sauce, and various accompaniments. Special because it presents sweet, sour, spicy and savory flavors all in one dish, reflecting the richness of spices and the balance of flavors of Indian cuisine.

🛒 Ingredients

  • 2 cups white rice
  • 1 cup wheat flour (for Naan bread)
  • 2 potatoes, diced
  • Chickpeas 1 cup (soaked overnight)
  • 3 tomatoes, chopped
  • 5 cloves of shallots, sliced
  • 3 cloves of garlic, finely chopped
  • 1 piece of ginger, grated
  • Indian spice mix: turmeric, cumin, coriander, chili powder, salt to taste
  • 1 large banana leaf
  • Mixed vegetables (cauliflower, carrots, long beans) to taste
  • Cooking oil/samin oil to taste
  • Fresh coriander leaves, for garnish

    Prepare all the ingredients: chop the tomatoes, slice the shallots, finely chop the garlic, grate the ginger and clean the mixed vegetables. Heat cooking oil/Ghee in a large frying pan over medium heat.

    Sauté the shallots, garlic, and ginger until fragrant and golden brown. Add the Indian spice mix (turmeric, cumin, coriander, chili, and salt), stirring quickly to prevent burning.

    Add the tomatoes and mixed vegetables and stir well. Cook until the tomatoes are soft and the spices have absorbed the vegetables. Add a little water, cook on low heat until the sauce thickens and the vegetables are cooked thoroughly - this makes a variety of curries for dishes.

    Cook white rice to your liking. Prepare a dough of wheat flour, water, and a little salt. Knead it, then flatten it and bake it until cooked through to make naan bread.

    Prepare a large banana leaf, place the rice in the center, arrange various curries around it, and add flatbread on the side. Garnish with fresh coriander leaves for a more beautiful and fragrant finish.
