
Dal Tadka
Dal Tadka is a rich Indian dish of tender chickpeas in a thick, golden-yellow sauce. - Yellow lentils / toor dal 1 cup, washed thoroughly
- 3-4 cups of water
- 1/2 teaspoon turmeric powder
- 1 teaspoon salt
- 2 tablespoons ghee/cooking oil
- Cumin seeds 1 teaspoon
- 2 cloves shallots, finely chopped
- 3 cloves garlic, finely chopped
- 1 piece of ginger, finely grated
- 2 red chilies, sliced
- Chili powder 1/2 teaspoon
- Coriander powder 1 teaspoon
- Coriander leaves to taste, sliced for sprinkling

Boil lentils with water, turmeric, and salt until soft and slightly broken down. Stir well until the sauce thickens slightly. Set aside.

Heat oil in a separate pan, add cumin seeds until they pop.

Add the shallots, garlic, ginger, and chilies. Sauté until fragrant and brown.

Add chili powder and coriander powder, stir briefly so it doesn't burn.

Pour the sautéed spices into the cooked peanut sauce and stir well. Bring to a boil and adjust the seasoning.

Remove, sprinkle with fresh coriander leaves, and serve warm.
